The Zwilling Pro 8-Inch Chef's Knife has a similar design to the Wüsthof, but Zwilling's blades are generally more flexible, which the brand attributes to its technique of heating the steel at extreme temperatures before hardening it with ice.

A: Classic is a forged knife that completely through the handle. The gourmet only goes partially through the handle and is not completely forged. Classic is a better knife, but gourmet is still a fantastic wusthof product.

Forgings. Open die forgings, if unmachined, will typically exhibit tool marks on exterior surfaces where the forging tool has pressed against the workpiece to shape it. Often, these are a multiplicity of “flat” marks where the workpiece has been hammered or pressed repeatedly during the forging process.
As its name suggests, however, cast iron is meant solely to be cast; it cannot be forged.
Henckels typically get a score of 56-57 on the scale and Wüsthof gets a 58, so technically Wüsthof is a slightly harder steel. This is good because it means Wüsthof knives vs. Henckels will hold their sharpened edge better. On the flip side, a softer Rockwell score means a knife is easier to sharpen.
