Luckily, all three Le Creuset cookware ranges are perfectly suited for induction cooking. Le Creuset Cast Iron, Stainless Steel and Toughened Nonstick Cookware are all optimized for induction cooktops – and can be used on any heat source including ceramic, electric and gas.
Is my Le Creuset cast iron compatible with induction hobs? Yes, all our cookware (except our stoneware range which should not be used on the hob top) is suitable for use on an induction hob. Just remember to keep to a low to medium heat, for durability and delicious results! Food is sticking to my cast iron casserole.
We recommend enameled cast iron cookware no matter what kind of cooktop you have—and yes, that includes induction. Here, we explain why enameled cookware works just as well on induction as its non-enameled counterpart, and how induction cooktops can actually make your decades-old Dutch oven perform even better.
Aluminum or aluminum clad, copper or copper clad, aluminum foil, glass/ceramic and some stainless steel products (because these will not attract and hold a magnet) cannot be used.
You can use a dutch oven on any kind of cooktop, including induction, as long as the dutch oven is cast-iron or another induction-compatible material. When you are using the dutch oven on a direct heat source, just make sure that the temperature does not get too hot and scorch it.
Will cast iron scratch on induction surfaces? When handled with care, you can avoid scratching your induction cooktop with a cast iron pan or other induction-compatible cookware. Due to the rough bottom and hefty weight of cast iron pans, make sure to lift, rather than slide them when moving.
Steer clear of non-compatible materials like glass, copper, or aluminium. Refrain from Sliding Pots and Pans: Do not slide your cookware across the hob's surface, as it may scratch or damage the delicate glass top. Always lift and place your pots and pans gently.
You won't cause any damage to your stovetop or your pan, but the burner itself simply won't turn on, so your pan won't get hot. This is because any pan used on an induction hob must be made from or have a base that contains a magnetic material, which effectively completes the circuit within the hob.
However, Calphalon Contemporary stainless steel and Calphalon Tri-Ply stainless are induction. If you have old cookware, not necessarily Calphalon, another way to check for induction compatibility is to take a regular magnet and see if it will stick to the bottom of the pan. If it does, it will work on induction.
Cookware made only from glass (including Pyrex), aluminum or copper will not work on an induction hob. However, some cookware manufacturers offer aluminum or copper pans with a magnetized base that is specifically designed for induction cooktops.
We offer the most variety in enameled cast iron cookware, with a shape, size and color to suit every recipe and cooking technique. But no matter which piece of cookware you choose, Le Creuset enameled cast iron can be used on any stovetop, including ceramic, glass, electric, gas, halogen and induction.
We recommend preheating your pan over low heat on your induction burner for a few minutes before turning the temperature up. This will heat the skillet up gradually, and more evenly, helping to prevent any hot spots.
When using Le Creuset skillets, fry pans and grill pans, the empty pan can be preheated over medium heat for no more than 5 minutes before adding food. Use some kind of oil or fat – Unless you're using a non-stick pan, you need to use some kind of oil or fat to grease the pan and prevent sticking.
As long as there is ferrous metal in the bottom of the pan, such as in cast iron, stainless steel, and some cookware that's being made with a plate of steel in the bottom especially for induction units, the electromagnetic current will flow from the unit into the pot or skillet and cook just fine.
Le Creuset cast iron is enameled, and therefore does not require seasoning like traditional raw cast iron. How do I clean cast iron? Although it may be washed in the dishwasher, hand washing is recommended to preserve the enamel's shine.
Ceramic-Coated Cookware
Our Cookware Set is versatile enough to handle all sorts of recipes–from scrambled eggs to a demi-glace. Is it safe to use on all stovetops and ovens? Yes! Our cookware is induction compatible.
Start by placing a magnet on the base of your pan, and if it sticks firmly, it will work with your induction cooker. If it doesn't stick firmly, it may work, however it will not work efficiently. If the magnet does not draw toward the pan's base, the pan does not have the metals to create heat with an induction cooker.
Le Creuset Signature Stainless Steel pans are suitable for use on all hobs, including induction. They can also be used in all types of conventional oven and, for shallow shapes, under the grill. The 3-layer construction of the pans means you do not need to cook on high heat settings.
Because of its magnetic steel base, the HexClad Hybrid Pan rapidly conducts heat and is suitable for induction cooktops. Also, it is oven-safe up to 500 degrees Fahrenheit. HexClad is sturdy enough to last a lifetime, and as such, the company backs up its cookware with a lifetime warranty.
While induction cooking has many advantages, it is essential to consider the disadvantages of induction stoves as well. These include the need for induction-compatible cookware and a higher upfront cost compared to traditional cooktops. Additionally, induction cooktops heat up pans quickly which can cause severe burns.
While induction's speed is an advantage, it requires a rhythm and pace of cooking that differs from gas or electric, and may take time to adjust to. A home cook may initially be confused by the appliance's disappearing touchscreens—or the fact that when pans are removed from the cooktop, it turns off.
