Wiping down and sanitizing kitchen surfaces after each time you use them ensures stray germs from last night's dinner prep don't end up in your next sandwich.
Dilute household bleach with warm water according to the directions on the bleach. Wipe the countertops down with the solution using a reusable cleaning cloth. Add some dish soap, and dampen the cloth with warm water. Wipe down the counter, and reapply dish soap if the suds run out before you finish the whole counter. Afterward, thoroughly rinse out your cloth until the soap is gone. Rewet it with warm water, and use it to rinse the soap suds off the countertop.
Just soap and water should do the trick to clean most messes from a granite countertop. Avoid vinegar, lemon juice, ammonia, bleach, and glass cleaners like Windex or Glass Plus.

If you have a quartz countertop, you should be able to use Dawn Dish Soap without any issues. However, if you notice any discoloration or staining, you might need to switch to another brand of dish soap.
The chemicals can be dermally absorbed or orally ingested after one touches a disinfectant wipe, or when they stick around on surfaces after the use of disinfectants. Inhalation is also a risk, especially with spray disinfectants, and the chemicals are also known to attach to dust and go airborne.
Maybe vinegar is acidic enough to act as a sanitizer, but hydrogen peroxide is better at killing bacteria, fungus, and viruses. To disinfect a surface, you can use a 50/50 hydrogen peroxide and water solution. Spray it on a clean surface and let it sit for at least 5 minutes.
