A standard size range/oven will slide right in to a completely finished 30" opening. I agree with exactly 30". Anything more leaves a gap.
Household cooking appliances shall have a vertical clearance above the cooking top of not less than 30 inches (760 mm) to combustible material and metal cabinets.
That being said, between 30 1/4" or 30 1/2" for a 30" stove for counter clearances.
Cabinet doors and drawer fronts are recommended being over an inch away from the oven for safety.
There should be a space between cabinet walls and the range hood. Some architects and designers provide only enough space between the cabinets to accommodate the exact width of the hood. This is a bad idea for several reasons: Lack of space makes installation more difficult.
Stove: gas or electric
Make sure you have a 30” clearance between the cooking surface of an electric stove and the bottom of your upper cabinet and a 36” clearance for a gas stove. This means that the bottom of the cabinet with the range hood should be 66" to 72" from the finished floor.
If you have an electric cooktop, range hoods should typically be 20–24 inches above the heat source. For gas cooktops, your range hood should be around 24–30 inches above the stove. Range hoods are a great way to complement your cooktop or range and can help clear the air while you cook.
As a rule of thumb, a wall oven requires around 3 inches of room in between your cabinet walls. This gap will enable you to install virtually any standard oven housing unit. It will also help shield the surrounding cabinetry from the oven's heat.
Ensure Proper Ventilation: During the self-clean cycle of your oven, ensure that there is adequate ventilation in the kitchen to prevent excessive heat buildup in adjacent cabinets. Opening windows or using exhaust fans can help dissipate heat and reduce the risk of damage to nearby cabinetry.
Stove sizes fluctuate more in width than in depth or height, since most countertop and cabinet dimensions are standardized. The goal is for your range to fit mostly flush with the top of your countertops and the front of your cabinets, with the door only sticking out an inch or two beyond the cabinets.
Of course we don't plan on grease fires, but they happen a lot more often than you would expect. Many installers may recommend a distance of 3-6 inches of space being the minimum. However, we always recommend increasing that to around nine inches of open space.
Stove dimensions can vary between the stove size itself and the cutout measurements. For example, a 30-inch stove may actually measure at 29⅞ inches wide, but it will require a 30-inch cutout for installation. It's important to check the exact specifications of each stove to make sure it will fit your available space.
Cooking surface landing area: 12 inches to 15 inches on each side for hot items and ingredients used for cooking. Oven landing area: 15 inches adjacent to one side, both sides, or on the counter above the oven for hot items and ingredients used for cooking.
You can combine an upper cabinet next to the cooktop as one of your locations. It's a perfect location for daily use items like spices, flour, and oil, and have a second set of rollout pantries on either side of the stove for additional ingredients.
A minimum clearance of 36 inches from the top of the stove to the ceiling or any combustible materials above it. Hearth Requirements: The hearth should extend at least 18 inches in front of the loading door and 8 inches on each side of the stove.
Firstly, the minimum space allowed between the cooktop elements or gas burners and combustible materials directly overhead is 600 mm.
Silverware and miscellaneous cooking utensils go well in the upper drawers of the lower cabinetry section. Food prep appliances such as heavy blenders, toasters, popcorn makers, waffle makers go nicely on lower shelves. Pots, pans, and baking sheets are best placed in lower cabinets near the stove and oven.

How Much Space Do You Need for a 30-Inch Stove? A 30-inch (76.2 cm) stove needs at least 31 inches (78.7 cm). This means half an inch on both sides. While fitting the stove snuggly may sound like a great idea, it is not practical.
30" of air clearance is required between the cooktop surface and bottom of an unprotected wood or metal cabinet above. 0" of air clearance is needed for the sides of the Range below the cooktop surface.

The minimum distance between your gas cooktop and range hood is 65cm. This is to ensure your safety because of the gas and fire.
A minimum clearance 'work zone' of 40” (102 cm) should be provided in front of a kitchen stove, with a larger 48”-60” (122-152 cm) clearance provided between other kitchen appliances.
Without a backguard, a stove or range should typically be installed at least 6 inches away from a combustible back wall surface, like drywall. With a backguard, the range can usually be installed with zero wall clearance.
