Cover the baking pan with 2 tablespoons of baking soda and 1 cup vinegar. Let the mixture sit for 30 minutes. This will release stuck-on food so that it can be easily wiped away.
Your ceramic pan is durable but not indestructible. Using abrasive pads or harsh chemical cleaners can erode the non-stick coating over time.
You can often 'save' ceramic nonstick by making sure they are super clean. To do that, Mix some baking soda and water into a thick liquid, coat the whole pan with it, and then heat it up to a low simmer on the stove for a few minutes.
Start by mixing together one cup of water, 2 tablespoons of baking powder and ½ a cup of white vinegar. Place the mixture into your non stick pan or cookware and place it on the stove. Allow the mixture to come to the boil and leave it that way for approx 10 minutes.

Degraded Coating

While all nonstick pans eventually lose their coating, there are ways to properly care for and maintain your nonstick products to help ensure the ceramic coating lasts several years.
The simple process of seasoning your delivers the quick-release ease of non-stick, without the presence of PTFE and PFOA. To season your ceramic cookware: Lightly rub cooking oil onto the cooking surface. Heat the cookware over medium heat for 2 to 3 minutes and then remove from heat.
We use wood or silicone cooking utensils — never silverware or metal utensils, so the inner pans are not scratched whatsoever. On the outside, we've had some spills, grease, and who-knows-what burn onto the outer pan underneath, and we easily scrubbed it off with some barkeepers friend.

Try oiling the surface to bring back some of the pan's nonstick quality. (Use seed oils to do this, not olive oil.) Place the pan on medium heat for about five to seven minutes to bring the oil to its smoking point, which helps the oil bond to the pan's surface.

The Bottom Line
Caraway is pricier than GreenPan, but their products have consistently been top performers in our tests and have continued to deliver top-quality performance after years of use. Alternately, GreenPan is more affordable but did become less nonstick over time.
As a general rule, we suggest using high smoke-point oils (like grapeseed) over olive oil for any kind of high-heat cooking. This is because olive oil can burn more easily which can, on occasion, decrease the pan's nonstick properties—as it turns out, this is actually the case for all ceramic pans.
Clean the pan, then heat it over medium heat for 3 minutes. Add 2 tbsp (30 mL) of vegetable, canola, or coconut oil to the pan, coating the bottom entirely. Heat the oil in the pan until it smokes, let it cool completely, and wipe out any remaining oil. Your pan should now be re-seasoned and stick-free.
