To make scrambled eggs on the stove, melt a teaspoon of butter or olive oil — or a combination of both — in a nonstick skillet over medium heat. Butter and oil add rich flavor to the eggs and help prevent sticking, but you can also use cooking spray.
Use butter or coconut oil! Before I researched this, I was always coating my pans with cooking spray. Cooking spray may work for some pans, but using butter is working much better with my stainless steel pan. Coconut oil is also a great option.
You can and it works fine. I use either PAM for Baking or the Crisco for Baking... both have flour in them. I line pan bottoms with waxed or parchment paper, then spray the pan...releases cleanly every time!
Nonstick surfaces: While it might seem like extra insurance, using cooking spray on nonstick pans can lead to a buildup of residue, potentially compromising the effectiveness of the nonstick coating. A small amount of butter or oil is recommended instead.

Stuck-On Residue
Perhaps the simplest reason that some non stick pans start to stick, especially if the pan isn't very old, is that there's a layer of stuck-on food residue getting in the way. Even the thinnest layer of dried egg white or residual starch from stir-frying potstickers can cause food to stick.
“I personally don't use cooking spray but instead use avocado oil or tallow to coat the pan or baking dish,” she explains. “If needed as it melts I spread it out with a paper towel.” It's the same for Michelle Price of Honest and Truly. “I also prefer to use butter to grease rather than the non-stick spray,” she says.
Spray a non-stick pan with cooking spray or add a small amount of butter. Heat pan over medium heat until hot enough to sizzle a drop of water. Pour in the egg mixture.
If you're counting your calories, cooking spray is the way to go. A one-second spray contains about 7 calories and 1 gram of fat. By comparison, a tablespoon of butter and olive oil both contain over 100 calories and 12 to 14 grams of fat, respectively.
In addition to using bacon grease, you can achieve crunchy fried eggs by basting them with the fat. This step helps cook the top and bottom of the egg, so they're crispy with soft yolks and pillowy whites.
Alternatively, you can use paper liners or silicone liners to prevent sticking. You'll also need a rimmed baking sheet that the muffin pan fits into. (This is important! You'll be lifting this pan to place the egg muffins in the oven.)
You can spray the pan with cooking spray instead of using butter, if desired.
PAM is marketed in various flavors, such as butter and olive oil, meant to impart the flavor of cooking with those ingredients. PAM also markets high-temperature sprays formulated for use when grilling, etc., and one containing flour suitable for dry-cooking as in baking.
Fried Egg Method: Cold Start
The egg is poured into a cold, empty nonstick skillet — no oil or butter at all — and then cooked over medium heat until the whites are just set. Results: The upside to the cold start is that the eggs cooked pretty gently and had almost no browned edges.

This spray passed all of our baking tests. The wheat starch and propellant in this spray combined make it visible, which allowed us to be sure that we covered the entire pan.
The spray can be applied evenly and fill those areas, helping to prevent the cake from sticking when trying to release it from the pan. The tandem of flour and fat — which is what distinguishes baking spray from a cooking spray — provides a coating that makes it much easier to take a finished pastry from its pan.
Experts today often recommend coconut oil as a healthier alternative to vegetable oils. Cooking with coconut oil is ideal for certain dishes, like curries, and if you want to reduce your fat intake, use coconut cooking spray, instead. Unrefined coconut oils and sprays are less processed.
