If the water turns cold and continues to run, you have a plumbing crossover problem, where cold water is crossing over to the hot water side. Check all the incoming water pipes that lead to a single-handle faucet. If you find both cold and hot water pipes cold, you have crossover.
It is called thermal expansion. As cold water heats it expands and can only expand into the feed line as the hot lines are typically shut off until you want hot water. Running a couple quarts of hot water will typically alleviate the symptoms.
A vent connector is the thing that takes the exhaust gases from the top of the water heater (draft hood) to the vent. If a vent connector isn't properly installed, the potential for the water heater to backdraft increases. Insufficient rise in the vent connector can contribute to backdrafting.

It is only necessary to open the faucets a half turn to allow the air in your pipes to escape. After you turn on all the cold and hot water faucets in your house, you should also flush your toilets to clear out the air trapped in your pipes.
