In most cases, we DON'T recommend these oils for deep frying: Extra virgin olive oil: Has a very low smoke point and is not a great choice for deep frying.
Virgin olive oil is unsuitable for deep frying as it has a low boiling point, produces a lot of smoke, burns easily and does not reach high temperature.
If an oil is heated beyond its smoke point, it gives off toxic smoke. Because olive oil has a low smoking point, cooking with olive oil runs the risk of creating smoke that contains compounds that are harmful to human health. You may not even notice that you are breathing in this toxic smoke.

The fries are cut, blanched, pre-fried, and frozen by suppliers, and once they're ready to be served to customers, they're finished off in a canola oil blend of non-hydrogenated rapeseed and sunflower oil.
(Note that the smoke point given by the USDA of 410 °F is for extra virgin olive oil. Olive oil and light tasting olive oil have a higher smoke point of up to 468 °F.) In fact, more and more research is dispelling the notion that you can't use olive oil for higher temperature cooking like frying.

Olive oil in Italian cuisine

Flay explains that "ninety-eight percent of the time, I cook with canola oil. It has a higher smoke point than olive oil and, because it's so neutral, it's not going to change the flavor of what I'm making." He does suggest finishing dishes with olive oil, however.
