It only takes one coat to get a rich, deep color on poplar. I like to use red gel stain for a project that looks like it's built from cherry without the expense of the finer wood. Dark brown stain works great to create the look of walnut.
Finishing a piece of pine with walnut stain does not make it look like walnut any more than staining a gravel driveway orange-red makes it look like brick. Even if you get the color perfect, the inherent differences in grain, pore structure and figure will give you away.

Dark Walnut by Minwax is my favorite option if you want to stain oak wood dark. Dark walnut is a really rich, chocolatey brown stain color. This is a dark stain – but if you are looking for a deep, rich color, this is a really great option.
Minwax Jacobean (also available here!) is a rich, dark brown color. It's similar to Dark Walnut, but a bit darker and the golden grain hues are more subtle and bit more light brown toned.

It is very dark brown in color with black undertones. It is really a classic wood color – if you think of dark, expensive wood surfaces, this is a color that might come to mind. What is this? Dark Walnut goes onto projects VERY thick and dark.
If you want a lighter colored board go with Maple, and if you want a darker board go with Walnut. Maple is a slightly higher quality wood with many benefits. Still, despite that, it is a less expensive end product though Walnut offers its own advantages.
New walnut has a consistent dark-brown color but as it gets older, two changes occur. 1: Unlike maple and cherry, it gets lighter. 2: A rich honey color starts to come through the grain.

Even if you successfully stain your chosen wood to imitate walnut, the grain and pore structure will vary slightly. If you're looking for wood similar to walnut, acacia is the answer.
