Most of the time Wendy's cooks their fries in vegetable (soybean) oil. They also cook their nuggets, chicken tenders and crispy chicken sandwiches in vegetable oil in a separate fryer.

As health concerns over saturated fat grew in the 1990s, McDonald's finally made the switch to vegetable oil. Unfortunately, customers noticed that the fries didn't taste how they used to.
According to the Chick-fil-A website, they use “100% refined peanut oil.” They go on to state that “refined soybean and peanut oil are not considered major food allergens.” In fact, refined peanut oil provides a perfect medium for creating crunchy foods at high heat without off flavors.
Kentucky Fried Chicken had the latter in mind when selecting which vegetable oil it would fry its famous chicken in. As of 2007, KFC uses low-linolenic soybean oil for all of its frying needs. Different from typical hydrogenated soybean oil, the low-linolenic variety has less linolenic acid.

Sister brand Taco Bell also said Monday that its U.S. restaurants have completely switched to an oil with zero grams of trans fat. All 4,200 single-brand Taco Bells were converted to a canola oil, and all 1,400 multibrand locations switched to a soybean oil, the fast food chain said.

Popeyes operates under a "Never Frozen" policy, only serving fresh, prime-quality chicken. They use a 75% beef shortening blend and 25% vegetable oil to fry their chicken pieces. The beef tallow blends and vegetable oil are formulated to achieve the perfect breading and crispiness their customers crave.
Why Jack in the Box uses canola oil. American fast-food chain Jack in the Box has 2,200 restaurants, each with three to five fryers holding 30 pounds of oil. All of it is canola oil. “We embrace our frying,” says John Pugh, Jack in the Box menu strategy category leader.
The taste of a french fry is largely determined by the cooking oil. For decades McDonald's cooked its french fries in a mixture of about seven percent cottonseed oil and 93 percent beef tallow. The important thing is to use something with a high smoke point (meaning that it can be heated to a high temperature without burning). Think vegetable oil, canola oil, or peanut oil. Don't use olive oil or butter—they both have lower smoke points.
If you or a loved one has a peanut allergy, knowing exactly what's in any given food you're consuming is second nature. You may even recoil at the word “peanut.” That instinct could lead you to automatically reject restaurants like Five Guys and Chick-fil-A, which make it clear they cook with peanut oil.

Salted products also release water and cause foam formation that can cause oil breakdown. Salt can also act as an impurity and lower the smoke point, which in turn degrades oil and shortens its lifespan. To prevent oil degradation, it is ideal to avoid adding salt before frying.
