So basically - don't eat it, don't get it in your eyes or rub your eyes if you've got it on your hands, don't leave it on your skin all day, and if you're going to be using it a lot (like, multiple hours a day, multiple days in a row) you should probably get a respirator and chemical-resistant gloves.
I've used both, and GemTac works significantly better. Unlike E6000, if a bit of GemTac curls up around the side of the gems, it doesn't hinder any shine, and it isn't as stringy as E6000. I do prefer non-hot-fix when using adhesive since the glue pads can come loose from the stones though.
