Keeping your fan on AUTO is the most energy-efficient option. The fan only runs when the system is on and not continuously. There is better dehumidification in your home during the summer months. When your fan is set to AUTO, moisture from cold cooling coils can drip and be drained outside.
Fans with solid-state controls, for example, will only run at preset speeds such as low, medium, and high and cannot be controlled using a remote. The best thing you can do to improve your ceiling fan's slow speed is to replace the speed controller with a compatible one.
The three positions provide 230 VAC to each of the three outputs. This allows you to adjust the fan speed from low to high in 3 steps. With the version without Off position your fan will always be running at a predetermined low speed. It can never be completely switched off.

Ceiling fan direction winter = clockwise (updraft). Ceiling fan direction summer = counterclockwise (downdraft). Fans with pull chains have a reversing fan switch that you'll use to change the direction.
The majority of ceiling fans rotate clockwise on Winter mode and anti-clockwise on Summer mode. Like most functions, this can vary between models, but it's fairly easy to tell if your fan is on the wrong setting.
Performance vs Noise
For optimal performance, higher fan speeds are ideal. If your focus is on low noise, however, you can consider setting your fan speeds lower. As a low noise enthusiast, you can even consider running your case fans at 20% until the CPU reaches a temperature of 60°C (as an example).

Summer and Winter mode is basically the ability to change the direction the fan blades spin. On AC type fans there is usually a switch located on the fan itself that can be switched to reverse the direction of the blades while newer DC fans have this reversing switch on the remote control handpiece.
