From a practical point of view, as the name suggests, jointless wall and flooring tiles have minimal space between each slab, which we can therefore be define as “continuous” precisely because they eliminate those interruptions outlining the edges of the tiles, making them in fact invisible.
If the tile has set for 24 hours, you can definitely walk on it, grouted or not. Done 100's of tile floors.
If you do not grout them it will leave them open to the possibility of food and water getting into the openings and the possibility of damaging the tile and wall. There are a few no grout tiles, i.e. vitrified tiles. If your tile project is in a dry area, you can install this tile without grout.
Disadvantages: Since the minor dimensional variation is possible in tiles, paper joints often leads to unequal gaps between the tiles. These gaps are not suitable for proper grouting. So this leads to dust collection.

I am also assuming that when you say zero joint you been the tiles are butted up to each other and there is no space for grout. Industry standards do not recommend butting tiles together whether they are a stone tile or a ceramic tile.
For the most part all the tiles are identical. This makes a lot of people want to install them without grout lines. Although in some people's opinion butting the tiles against one another looks better than having even the smallest grout lines, it is not a recommended installation procedure.
