Coat the exposed areas of Plaster of Paris with any oil based metal primer paint and it will in all likelihood do the job. Since they usually prevent metals from rusting, they can in effect be used to form a waterproof coating. Some water based primers too have the same effect.
It'll be fine. Plaster 'dries' by chemical reaction anyway so it'll do what it needs to do, the minimal water that's left will either soak up and out or back into the wall depending what it's bonded with. Either way, it'll be fine.
Plaster of paris is now not a water-resistant substance. It is a notably dry and porous substance. Whenever it is uncovered in water, it will soak up it. Plaster of Paris is an extraordinarily porous cloth when dried, and as such, will take in any new water that touches its surface.

Another way to seal the plaster prior to painting is to apply a readymade sealer, Dulux make one specifically for new surfaces. I personally use acrylic stabilising solution, really made for stabilising chalky surfaces, but also excellent for sealing bare or new plaster.

Firstly, the water softens the plaster, and it begins to loosen up. If you don't take steps to dry out the plaster and remove all this moisture, then you quickly end up with damp, which turns to mould.
The plaster will need a minimum of 3-5 days to achieve full dryness, but for some jobs, it may take up to 4 weeks. Once it's dried, the plaster will appear pale pink, and any previous brown patches will have disappeared. Not allowing the plaster to dry sufficiently can also harm the quality of the finished job overall.

Reapplying Plasters

Traditional gypsum plaster can be prone to moisture damage, and we do not recommend this product for wet areas like bathrooms. However, modern bathroom plasters, such as our Rock and Hydro plaster systems, can withstand the unique challenges of a bathroom environment.
Don't get your plaster cast wet. This will weaken it, and your bone will no longer be properly supported.
Tadelakt is coated in an oil-based soap that renders the surface almost completely waterproof, water-resistant and mould-free- and as such is an ideal waterproof plaster for showers and wet rooms.
