For a straight stitch, a length around 2.5 mm is great for seams, and for topstitching increase the length to 3 or 3.5. Remember that a longer stitch length means less durability. It also means less coverage if you are using a zigzag stitch, which can cause fraying of the fabric.
It's the structure of the stitches. The offset you're seeing as ``twist'' is caused by the physical displacement of the top thread by the bobbin thread in the thickness of the fabric. It's normal, those stitches are fine. The only way you're going to get better stitching is with a straight stitch foot and plate.

Causes of Puckered Seams
Puckered threads across seams are due to a blunt needle or too large a needle. Stitches are too short for synthetic and easy care fabrics. Using a plate with a wide needle hole may cause straight seams to pucker. Upper thread and bobbin threads are of a different size and/or type.
Use a Magnetic Seam Guide to Keep Your Stitches Straight
Just line your fabric edge against the magnetic seam guide as you sew. Some people claim a magnetic seam guide is not to be used on computerized sewing machines. I know for a fact that it's perfectly safe to do so. It doesn't interfere with the machinery 😊.
When sewing seams, use a straight stitch 2mm to 2.5mm long, depending on the fabric. A shorter stitch length is used on lightweight fabrics that tend to pucker. A length of 6mm is used for gathering and for basting. Some machines offer an even longer straight stitch variation specifically for basting.
