If food is sticking to your nonstick surface, there may be a residue on the surface causing food to stick. This residue is usually formed from the natural oils in the foods you cook and does not always come clean with regular dish washing liquid.
Consider using a non-stick cooking spray before cooking to help maintain the finish and improve food release. Cooking on high heat can degrade the non-stick surface more quickly. Stick to medium or low heat settings. Stacking: If stacking pans, place a soft cloth or paper towel between them to avoid scratching.
CALPHALON PREMIER NONSTICK
Use a liquid dishwashing detergent and a non-abrasive sponge or soft bristle brush. For better cooking results, preheat the pan using the setting you intend to use when cooking, before adding butter or oil.
This can happen if you leave food or oil in an unattended pan with the burner on, or if you cook with it on high heat. A layer of burnt-on oil or food gets in between the coating and whatever food you're cooking, effectively rendering that coating ineffective.

The Cause:
Occasionally food may stick to your cast iron cookware. This can happen for a variety of reasons, such as not using enough fat or oil when cooking, using cookware that isn't well seasoned, or when breaking in new cookware that hasn't built up additional layers of seasoning.
In general, you want to replace nonstick pans after five years. But you need to be particularly careful with nonstick cookware produced before 2015, as it may contain PFOA. If your cookware dates back to 2015 and earlier, it's likely time to replace it even if it doesn't contain PFOAs.
We recommend using oil and flour in the Calphalon nonstick bakeware pan prior to baking cakes.
While Calphalon cookware features polytetrafluoroethylene-based nonstick finishes, we are not associated with, nor do we use, Teflon® branded products.
Before using any Calphalon cookware for the first time, wash in warm, sudsy water, rinse and dry thoroughly. Most Calphalon cookware does not require seasoning.
Long lasting and reliable
I've used Calphalon pans for more than 2 decades. These are to replace a few that I've had that long. Great pans. Wonderful to cook with.
Calphalon Cookware's lifetime warranty states that “Calphalon will replace any item found defective in material or workmanship when put to normal household use and cared for according to the instructions.” That excludes surface-level dings, dents and chips—but those don't affect the performance of the cookware, anyway.
Calphalon cookware is very heat-efficient; using high heat will quickly cause food to stick and burn. High heat is typically used for boiling water or stir-frying. Test the pan to ensure it is hot enough.
According to Staley, failing to preheat the pan makes foods more likely to stick, as does cooking over high heat, which degrades the fat in the skillet and reduces the barrier between the food and the stainless steel.
This is due to the nature of the coating, which naturally releases every time you heat up your pan. Once that coating has worn out, your pan will no longer be non stick—but will still be usable, and can be made relatively non stick once more with the help of cooking fat.
To do so, simply mix 1 cup water, 2 tablespoons baking soda, and ½ cup white vinegar in the pot or pan that's lost its stick, set on the stove, and heat until boiling for 10 minutes. Wash the pot as usual, then rub vegetable oil on the surface to re-season it and get the non-stick surface back.
Pour in enough oil to the pan to coat the entire surface of the pan. Some food, like eggs, may require more oil, or else they will stick to the pan. Fatty foods, like chicken thighs, need less oil. For butter, start with a thin layer of oil to prevent sticking or burning.
A good rule of thumb is to replace them approximately every five years. Look at your pans frequently. When they start to appear warped, discolored or scratched, be sure to stop using them.
PERRYSBURG, Ohio — Calphalon, a company that produces cookware and appliances, confirmed Wednesday it will close its Perrysburg production facility at the end of 2023, a move that will cost 130 people their jobs.
The nonstick coating is designed for long-term use when used properly and at the recommended cooking temperatures. If your nonstick coating is chipping or peeling, and your pan has been cared for according to the Use and Care guide, your pan should qualify for replacement under the manufacturer's warranty.
