Eggs are like glue. Any tiny microscopic holes in the pan, the egg will get into, and make the egg stick. The way that non-stick pans work is that they are microscopically smooth. If your eggs are sticking to a non-stick pan, it's time to get rid of the pan, the non-stick coating is breaking up.

In general, you want to replace nonstick pans after five years. But you need to be particularly careful with nonstick cookware produced before 2015, as it may contain PFOA. If your cookware dates back to 2015 and earlier, it's likely time to replace it even if it doesn't contain PFOAs.

These egg bites love to stick to the pan, so make sure your muffin tin is nonstick. If you don't have a nonstick pan, a good alternative is a silicone mold. It'll allow you to easily to pop out the egg bites!
If you don't have a nonstick pan, poach in a deep saucepan containing at least 3 inches of water. Always acidulate the poaching liquid with either vinegar or lemon juice (1 tsp per each cup of water).

Do NOT preheat on high heat and wait for the pan to cool. Calphalon cookware is very heat-efficient; using high heat will quickly cause food to stick and burn. High heat is typically used for boiling water or stir-frying. Test the pan to ensure it is hot enough.
The cooking temperature is key for the best omelette – too high and you end up with fluffy rubber, too low and the egg takes too long to cook and it might stick. A medium-high heat allows the eggs to set quickly without overheating them.
For best results, do not use aerosol cooking sprays on Calphalon cookware. These sprays contain a chemical propellant that is difficult to remove from cookware.

This form of damage is easy to recognise; the non-stick surface becomes discoloured and in extreme cases it will detach from the pan by either peeling or blistering. In addition to this never allow food to burn onto your non-stick pan. If burning occurs the non-stick will be compromised.
