two series is the price. Simply put, gourmet knives are much cheaper than classic knives. Fits within your budget. I highly recommend the Classic Series. The forged blades are harder, heavier, more balanced, and hold an edge longer. It's an investment, but one that you'll use and enjoy for decades.
There are a few primary differences between the Classic and the Ikon. The Ikon chef's knife has a demi-bolster, which is ideal for the pinch grip and really easy to sharpen since the edge of the blade goes from the tip to the end of the heel.
We print two numbers on our blades, one is our item number and the other is the “run” number so that we can identify knives that came from the same run in our factory. Some blades have a cross-hatch pattern on them instead of a run number.

Wüsthof Cutlery for Every Chef
Classic series knives are forged and, as the name suggests, have a traditional look with a triple-riveted handle. The black synthetic handle is fitted to the full tang and resists fading and discoloration.

Henckels typically get a score of 56-57 on the scale and Wüsthof gets a 58, so technically Wüsthof is a slightly harder steel. This is good because it means Wüsthof knives vs. Henckels will hold their sharpened edge better. On the flip side, a softer Rockwell score means a knife is easier to sharpen.
The best way to avoid a dull blade is to maintain your blade's edge by regularly honing your knife. Sharpening takes a small amount of steel off the blade, creating a new edge. We recommend using a honing steel for regular maintenance and a sharpening steel when your knife needs an edge reset.
The Zwilling Pro 8-Inch Chef's Knife has a similar design to the Wüsthof, but Zwilling's blades are generally more flexible, which the brand attributes to its technique of heating the steel at extreme temperatures before hardening it with ice.
