X50CrMoV15 Steel
Also known as 1.4116, X50CrMoV15 is a German steel that is often used in high-quality kitchen knives. The lower level of Carbon in X50CrMoV15 makes it a bit softer, meaning its edge retention and sharpness fall short of other high-end steels.
Besides being reasonably priced for the quality, the knife feels great to hold, and the blade is sharp and precise. Wüsthof has been producing knives since 1814 — the company knows what it's doing.

Durability of the German steel blade on the Wusthof knife is again regarded as stronger and thus more durable. Unlike, the smaller degree on the Shun blade which can be susceptible to the blade chipping, the Wusthof blade can chop effortlessly through a whole pumpkin.
The best way to avoid a dull blade is to maintain your blade's edge by regularly honing your knife. Sharpening takes a small amount of steel off the blade, creating a new edge. We recommend using a honing steel for regular maintenance and a sharpening steel when your knife needs an edge reset.
X50CrMoV15 is the most used type of stainless steel for kitchen knives by, amongst others, German manufacturers. It is a good type of steel for a very large audience. The corrosion resistance is very good and the cutting qualities are great.
5Cr15MoV Equivalent Steels
Compared to 420hc, 5Cr15 has roughly the same amount of carbon, but has a higher chromium content and a little less Vanadium. This makes 5Cr15 a little more corrosion resistant and a little less resistant to abrasion than 420hc.
S30V is a stainless super steel. Many people like the way Super Blue takes and edge. It has an incredible sharpening response and is easy to get hair whittling sharp.

Carbon steel blades are also well-known for having high wear resistance, which enables them to keep their edges sharp for longer than stainless.
