While we think a good collection of carbon-steel, cast-iron or stainless-steel pans offer better quality and longevity, a nonstick pan can be a useful asset to have in your cooking arsenal. Just don't rely on them for too long. Nonstick coatings simply do not last forever.
Stainless steel is often the most versatile and durable cookware. It can be used on any heat, including high heat, and is usually compatible with any type of cooktop. Nonstick cookware can fall under traditional nonstick or ceramic-coated.
Cast iron and a stainless steel pan will do 99% of what you need, and both will last longer that you will.
Based on this list, it is best to avoid Teflon and other nonstick pans, especially those made with either PTFE or PFOA, as well as aluminum pots and pans.
Teflon™ Nonstick Coatings Outperform Ceramic Coatings
Side-by-side testing between Teflon™ nonstick coatings and ceramic coatings shows that cookware made with Teflon™ nonstick coatings offers superior food release and durability.
“The most nontoxic cookware that you can buy is stainless steel, cast iron or carbon steel; things that don't have a coating on them,” says Alexis Pisciotta, culinary purchasing and events manager and cookware consultant for Food Network.
Every time you heat up a ceramic pan, it naturally releases a little bit. from whatever's underneath the ceramic, and that means that coating is wearing out. every single time you heat it, no matter the temperature, which then, unfortunately, makes it stick.
A simple “Baking Soda Test” can be done to test the toxicity of your cookware. The test helps you check whether toxic elements that leach out of the cookware are altering the natural taste, flavours and nutrients of your cooked meals.

Cast iron cookware is fairly unmatched in its longevity (the more you cook with it, the better it'll get). The same can be said for carbon steel as well. However, a high-quality piece of enameled cast iron or stainless steel cookware will also last a very long time.
HexClad's nearly indestructible three-ply pans consist of stainless steel, magnetic stainless steel (for induction stovetop compatibility), and aluminum, finished off with laser etchings and diamond (carbon) dust.
While most non-stick pans can last up to three years (read the manufacturer's instructions) if used and taken care of properly, poor-quality non-stick pans can start feeling sticky in under 6 months.

A certain minimum mass (i.e. thickness of metal) Ability of the metal to transmit heat fast around the pan (e.g. Copper or Aluminium both fast conductors of heat)
Teflon® is a registered trademark of DuPont and a brand name for polytetrafluoroethylene (PTFE) a nonstick finish. While Calphalon cookware features polytetrafluoroethylene-based nonstick finishes, we are not associated with, nor do we use, Teflon® branded products.

Provides rapid, uniform heating.
Ceramic's main advantage over non stick is that while not all non stick cookware is PFOA-free (like if it was made prior to 2014, or recently in a country without an active ban on PFOA), all ceramic cookware is made without PFAS.
Fill the pan halfway with water and bring it to a near-boil for about 2 minutes. Pour out the water and place the pan on a sturdy, flat surface. Carefully use a Mr. Clean Magic Eraser on the warm pan, and any residual carbon should clean up quickly.
What Does Non-Toxic Cookware Mean? Non-toxic cookware is any cookware made without the use of nonstick coatings, like PFAS. This means any cookware that is made of stainless steel, cast iron, or carbon steel—essentially any cookware that doesn't have a coating—is the least toxic product available on the market.
