The two most important rules for cleaning knives are to always hand wash them and to dry them immediately after washing.
Handling a knife:
Keep fingertips curled under the hand that is holding the food. Point the blade away from your body when cutting, washing, or drying a knife. Always use a cutting board.
Wash your knife with dish soap and hot water after each use. Rinse with clear water. Air-dry or pat dry with clean paper towels. Handle kitchen knives carefully by their handles; don't pile them into the sink or dishpan, but wash them one by one and rack them with handles up.
Rule #1: It is important to use a knife adapted to what you want to do / food you want to prepare. For example, you shouldn't use a bread knife to slice a roast or use the blade of a paring knife and use it as a screwdriver (don't laugh, we've all done it!) Rule #2: Don't drop your knife on the floor.
A knife must be cleaned and sanitized immediately after use, especially when switching between different types of food like raw meats and vegetables, to prevent cross-contamination. Additionally, it should be sanitized every four hours during continuous use to ensure it remains safe and hygienic.
To provide a short answer, knives that are used in the kitchen need to be cleaned after each use and sanitized at least once a day. However, all knives should be cleaned and sanitized at least once a year as a part of general knife maintenance.
Pathogens can grow to unsafe levels in the food after four hours. If that happens, not even cooking will make it safe. To prevent these pathogens from making people sick, clean and sanitize utensils and equipment every four hours.
Knife crime laws
It is against the law to carry a knife in a public place, unless the blade is less than 3 inches long and is a manual folding blade. Doing so can carry a prison sentence of up to 4 years even if it is not used in England & Wales, and 5 years in Scotland.
Our Nine Key Rules
What are the 10 Basic Rules of Kitchen Safety?
Use warm water, mild dish soap, and a soft sponge or cloth. Avoid abrasive pads that can scratch or dull the blade. Never soak knives with wooden handles in water; prolonged exposure can damage the handle and rivets. Knives with plastic handles and without rivets can be soaked for longer periods without issue.
Apply Knife Oil
Once the pivot area is clean, it's time to apply lubricant. Choose a high-quality knife oil specifically designed for pocket knives. Avoid using household oils like WD-40, as they can attract and stick more dirt in your pivot, ultimately leading to more significant problems.
In most cases, all you need to clean dirt and gore off your knife is dish soap, water, and a rag. Let your knife soak in soapy water, and give it some time.
Cut Away From You
The first rule of knife safety is always to cut away from your body or from another person. There is always the possibility of an accident or the blade sticking or slipping. Observe the same rule when sharpening blades.
2 - Never point your weapon at anything you do not intend to shoot. 3 - Keep your finger straight and off the trigger until you are ready to fire. 4 - Keep your weapon on safe until you intend to fire.
Cut in the direction away from your body. Keep your fingers and thumbs out of the way of the cutting line. Keep knives sharpened and in good condition. Let your supervisor know if you have concerns about the condition of any knife in the kitchen.
By learning the simple Case Dating System, you can easily determine the year a Case knife was manufactured. In 1970, Case added dots beneath the “USA” on the tangs of all knives. As each new year passed, one dot was removed. So, nine dots appeared in 1971, eight in 1972, and so on. CASE XX.
One of the most referenced rules in the series is Rule 9 – Never go anywhere without a knife. The difference is I carry a small pocketknife and the NCIS agents carry a Zero Tolerance (ZT) folding tactical knife. There's Rule 12 – Never date a co-worker.
If you are over the age of 18, you can possess a knife for personal use, like a kitchen knife. However, the knife must be kept at home and you cannot take it into the public realm without a valid reason.
The knife features assumed to indicate a weapon include a serrated blade, a “locking”' blade on a folding knife, double edges, and a cross hilt.
In particular, the holding and carrying of a knife in public is prohibited without good reason or lawful authority, unless it is a folding pocketknife with a folding blade of 3 inches/7.62 cm long or less.
less than 2 hours, the food can be used or put back in the fridge for later use • between 2 and 4 hours, the food can still be used, but can't be put back in the fridge • 4 hours or longer, the food must be thrown out.
