Burn off is meant to clean your smoker/grill out of the box. Burning off at a high temp for 30-45 minutes will remove any debris or product left behind after manufacture.

Whether you have food that won't come off with a grill brush or you're doing your annual deep cleanse, soak the grates in a mix of vinegar and baking soda. The vinegar and baking soda will work together to break apart burnt-on food.
Deep Cleaning Cast Iron Grill Grates
We highly recommend that you give your grates a nice hard wash with mild soap at least once per year. Many pitmasters preach that water will surely ruin your grates altogether, however as long as you dry them thoroughly and keep them seasoned, your grates will be fine.
Step 4: Season the grill grates
Place coated grates back onto your grill and start it up. Allow it to burn for about 15 minutes or until all oils burn off and stop smoking.

Let the Easy Off Work
After 24 to 48 hours, you should be able to wipe it off or use a SOS pad to scrub the carbon off. If any is left, simply repeat the steps until clean.

Grill Grate Cleaning Method: Store-Bought Degreaser
It did yield great results, but it took a lot to get to that point.
While the grill is cool, use a small shovel and bucket to remove the ashes. Fill a bucket with water and a few drops of a degreaser, like dish soap. Remove the grill grates from the grill and place them in the soapy water. Dip a scrub brush in soapy water and thoroughly clean the interior of the grill.
"Once a year, clean the inside of the grill with warm, soapy water — no abrasives," Karmel says. "Make sure you rinse the grill well and let it preheat with all burners on high for 30 to 40 minutes to burn off any residue."
