TRADITIONAL FORGING
This process is used to create the sophisticated full-tang design of the knives in the TWIN® Cuisine series. During the forging process, the steel is heated to above 1100 °C and struck into a die with a drop hammer to give it its shape.
Difference between Zwilling and Henckels Knives
They are essentially two brands under the same company Zwilling JA Henckels. They are also in different grades. Zwilling is the premium brand in the company's portfolio, while Henckels, also known as JA Henckels or Henckels International, is the entry-level brand.
While there are plenty of decent-quality stamped knives out there, we'll pretty much always recommend a fully forged knife over a stamped one. Stamped knives tend to be less balanced and strong, making for a less long-lasting edge and a more cumbersome experience overall.

The Verdict: Which Brand Is Better? The Wüsthof Gourmet 10-Piece Knife Block Set was a good starter set but isn't of lasting quality. The chef's and serrated knives were almost too short to be useful. The Zwilling set had more quality components, though the chef's knife struggled when cutting dense vegetables.
There are many types of kitchen knives made from both processes in each brand but in general, most Zwilling knives are forged and the majority of Henckels knives are stamped.
Forged knives go through over 40 steps in our factory to create the top quality blades WÜSTHOF has to offer. Forged knives include a bolster, which helps to balance the knife. Laser-cut stamped blades go through 14 steps in our factory, and are more economically priced.
Most of Zwilling's higher end knives are manufactured in Solingen, Germany, while others, including Henckels branded knives are made in Spain and China.

Many argue stamped kitchen knives don't hold their edge as well, however, it depends on the materials used and how they are maintained. Less so than how the knives are made. For upscale brands, sometimes forged knives made of better materials makes them more durable.
